Ginger And Lime Granola
Serve with yoghurt, or eat as is when you need something to snack on

Method
Preheat the oven to 160° Celsius
Place the syrup, oil, tahini and ginger into a small bowl and whisk to combine
Place the almonds, seeds, flour, coconut, zest and salt into a large mixing bowl
Stir to mix then add the syrup mixture and mix until combined
Tip out onto a lined baking tray and spread out as evenly as possible
Place into the oven and bake for 20 minutes
Remove from the oven, turn the granola over with a spatula and place back into the oven for 20 minutes
Remove from the oven, lower the temperature to 120° Celsius, and mix the granola with a spatula
Place back into the oven and bake for 10 minutes
Remove from the oven, add the goji berries and mix to combine
Leave to cool on the tray before storing in an airtight container
