Rich Egg Dough
The more yellow your yolks are, the richer the colour your pasta will be

Ingredients

egg yolks

Method
Place the flour, egg yolks and egg into a bowl of a stand mixer
Using a dough hook, mix until a dough forms
Knead for 10 minutes then turn out onto a piece of cling film
Flatten into a disc and cover tightly
Place into the fridge for at least 30 minutes, or overnight if you have time
Roll out and use as needed
