Salted Chocolate Biscuits

Ingredients

salted butter, softened

coconut sugar

egg, lightly beaten

dark chocolate, chopped
(I use 80% cocoa solids)

bicarbonate of soda

mls
salt flakes
Method
Place the butter, sugar, fructose and vanilla into a stand mixer bowl and cream together
Add the egg and mix well
Add the chocolate, and mix to combine
Sieve the flour and bicarbonate of soda into a mixing bowl
Add to the stand mixer a tablespoon at a time, until each addition is just mixed in
Add the salt and mix to combine
Cover the bowl with cling film and place into the fridge for 2 hours
Preheat the oven to 170° Celsius
Divide the dough into 8 pieces and roll each one into a circle
Press or roll each piece until 1 cm thick
Place onto a baking sheet lined with baking paper, spaced apart to allow for spreading
Place into the oven and bake for 20 minutes
Remove from the oven and leave to cool for 2 minutes on the tray, before transferring on the baking paper to a wire rack to cool completely
