Apple Tahini Blondies
These soft set blondies make for a great dessert

Ingredients

salted butter,
plus extra for greasing

apples, peeled, cored and cut into small cubes

Method
Preheat the oven to 180° Celsius
Place the butter into a frying pan over a medium temperature and heat
Once it starts foaming, leave to brown for 5 minutes
Pour into a mixing bowl and set aside to cool
Place the apples, maple syrup and cinnamon into the same pan, without cleaning it
Stir to combine and leave to cook for 5 minutes
Remove from the heat and set aside to cool
Place the xylitol and eggs into a stand mixer bowl and whisk until pale
Add the butter and vanilla and whisk to combine
Add the tahini and whisk to combine
Place the flour, baking powder and cardamom into a mixing bowl and whisk to combine
Fold into the wet ingredients until completely mixed in
Add the apples and mix to distribute them
Pour the batter into a greased and lined brownie tin and smooth the top as best as you can
Place into the oven and bake for 30 minutes
Remove from the oven and allow to cool in the tin until the tin is cold to the touch
Remove from the tin and place onto a wire rack to cool completely before cutting
Store in an airtight container and serve with honey chantilly cream
