Butterscotch Soft Serve
This can be made with store bought sauce and condensed milk if you want to cut down on time

Ingredients
For the condensed milk

For the butterscotch sauce

cream, at room temperature

softened salted butter, cubed
For the butterscotch soft serve

Method
For the condensed milk
Place the milk and fructose into a sauce pan
Bring to the boil and immediately reduce the temperature
Leave on a low temperature setting to reduce, stirring occasionally
As soon as it thickens, take off the heat
Stir in the bicarbonate of soda, and set aside to cool completely
For the butterscotch sauce
Place the fructose and water into a small to medium size saucepan
Place onto the stove on a medium to low temperature and allow to heat, without stirring
When the fructose is a lovely caramel colour turn the heat off
Add the cream while whisking - be careful as it will bubble like mad
Then add the butter and continue whisking until completely melted
Set aside to cool completely
For the butterscotch soft serve
Place the cream into a stand mixer bowl and whisk until soft peaks form
Add the condensed milk and whisk to combine
Fold in the butterscotch sauce and pour into a freezer proof container
Place into the freezer for at least 6 hours before serving

Store the excess condensed milk in a sterilized glass jar, or add it to coffee! See
