Chestnut Ice Cream
This is the perfect taste of winter on a hot summer's day

Ingredients

liquid glucose

vanilla paste

egg yolks

chestnut spread
Method
Place the milk, cream, glucose and vanilla into a heavy bottomed saucepan
Heat to just below boiling point on a low temperature
While waiting for the milk to heat, place the egg yolks into a mixing bowl
Add the sugar to the eggs and whisk until pale and thickened
When the milk has heated, pour half onto the egg mixture while whisking
Then pour the egg mixture into the milk while whisking
Keep on a low temperature and stir with a wooden spoon until the mixture reaches 82° Celsius
Pour into a lipped jug and add the chestnut spread
Mix to combine, cover and set aside to cool
When cool, place into the fridge overnight
Churn in your ice cream maker, as per the manufacturer's instructions
Place into a freezer proof container and freeze for at least 4 hours before serving
Remove from the freezer before serving to allow the ice cream to soften a bit
