Chicken with Chickpeas
Ingredients
- 15 mls coconut oil
- 4 chicken pieces
- Salt and freshly ground black pepper to season
- 1 onion, quartered
- 1 tin chickpeas, drained and rinsed
- ½ lemon, juice only
- 125 mls white wine
- 125 mls water
- 50 g sugar snap peas
Method
- heat the oil in a large pan
- brown the chicken pieces
- season to taste
- add the onion, chickpeas, lemon juice, wine and water
- allow to simmer for 40 minutes, until the chicken is cooked
- add the sugar snap peas
- increase the heat until the sauce has thickened
