Creamy Chicken Pasta
Makes enough for: 2 people
Ingredients
- 150 g pasta
- 10 g butter
- 5 mls olive oil
- 170 g asparagus, trimmed and cut into chunks
- 2 chicken fillets, thinly sliced
- Salt and freshly ground black pepper to season
- 125 mls cream
- ½ lemon, zest and juice
- 1 small handful chives, chopped
Method
- Bring a pot of water to the boil for your pasta
- While your pasta is cooking, heat the butter and oil in a large frying pan
- Sauté the asparagus for 5 minutes and then add the chicken
- Season and leave to brown before adding the cream and the lemon zest and juice
- Leave to simmer for 5 minutes
- Adjust the seasoning and add the pasta
- Toss to coat the pasta with the sauce and then remove from the heat
- Stir in the chives and serve
