Kansui
This alkaline salt is a necessary ingredient to make ramen noodles
Makes enough for: 4 grams
Ingredients
- 5 g bicarbonate of soda
Method
- Preheat the oven to 120° Celsius
- Line a baking tray with tin foil and sprinkle the bicarbonate of soda onto the foil in an even and thin layer
- Place into the oven for 1 hour
- Remove from the oven and place into a glass jar and use as needed
- Can be stored for up to 1 month
