Lemon, Lime And Bitters
This cordial mix is so amazing, you will find any excuse to have a drink to use it.

Ingredients
1
lemon, juice and zest
1
lime, juice and zest
fructose,
weight to be determined by juice
10
dashes Angostura bitters,
or more to taste
Method
Juice the lemon and lime into a measuring jug and make a note of the mls
Place into a saucepan
Weigh the fructose to be the same as the juice (i.e. if the juice measures 100mls you need 100g sugar)
Add to the juice and place the saucepan on a high heat
Stir to dissolve and then bring to the boil
Reduce the heat and simmer for 5 minutes
Remove from the heat and add the zest
Leave to cool
Add the bitters and stir
Place into a sterilized glass bottle
Store in the fridge
Strain into a glass with water or soda water, adding enough for your taste buds, I like mine strong
Notes
Reduce the sugar by 10% if you don't want it sweet.
This makes a very syrupy cordial.
