Okonomiyaki
Use this as a base recipe and add any toppings to make it a more complete meal

Ingredients
for the okonomiyaki sauce:

Method
for the okonomiyaki sauce:
Place the tomato sauce, Worcestershire sauce, oyster sauce, fructose and miso into a squeezy bottle
Place the lid on the bottle and give a good shake to mix the ingredients properly then set aside
for the mayonnaise:
Place the mayonnaise, vinegar, water and togarashi into a squeezy bottle
Place the lid on the bottle and give a good shake to mix the ingredients properly then set aside
for the pancakes:
Preheat the oven to 100° Celsius
Place the cabbage, togarashi, fructose and salt into a mixing bowl
Mix together, and set aside for 15 minutes, stirring every 5 minutes
Add the spring onions and eggs and mix to combine
Add the flour and fold in to combine
Heat 15mls of the oil in an omelette pan and over a medium to high temperature
Once heated, add 250mls of the pancake mixture (this should be half) and flatten it using a spatula so that it touches the edges of the pan
Cook for 3 minutes per side then place onto a baking tray, and place the baking tray into the oven to keep warm
Heat the rest of the oil, and repeat with the remaining batter
to serve:
Place each okonomiyaki on a separate plate and squeeze the okonomiyaki sauce in one direction in stripes across the pancake
Do the same with the mayonnaise but in the other direction to make criss-cross stripes
Sprinkle over the sesame seeds, spring onion, chives and bonito flakes
Serve straight away
