Recipe For Watermelon And Tequila Sorbet
Watermelon and tequila are a marriage made in heaven in my opinion. This sorbet is perfect to make when watermelon is at its ripest.
Makes enough for: 1 batch sorbet
Ingredients
- 150 g fructose
- 150 mls water
- 2 stalks rosemary
- 300 mls watermelon juice
- 15 mls tequila
Method
- Place the fructose, water and rosemary into a small sauce pan
- Bring to the boil, reduce the temperature and leave to simmer until thickened
- Strain and measure off 200mls sugar syrup
- Add the watermelon juice and tequila and stir
- Refrigerate overnight
- Churn as per your ice cream machine manufacturers' instructions
