Banana Waffles

Method
Pour the milk into a small mixing bowl, add the lemon juice and set aside to curdle *
Crack the eggs into a mixing bowl and 30mls fructose
Whisk until pale and fluffy then add the remaining fructose
Whisk until pale and fluffy then add the bananas, crème fraîche, curdled milk, butter and vanilla
Whisk until well combined
Place the flour and baking powder into a large mixing bowl and stir to combine
Make a well in the centre and pour in the liquid ingredients
Whisk until just combined and set aside
Preheat your waffle iron and lightly grease
Make your waffles as per the manufacturer's instructions, making sure they are nice and golden brown
Serve plain, with maple syrup, bacon, or as I have done here, with yoghurt and fresh berries

* or you can substitute with 80mls buttermilk
