Banana Waffles | Adapted From Let’s Cook

Bananas are so good for you, and even better when you turn them into banana waffles. These can be made in advance and the batter will keep for a few days in the fridge.

The Helderberg Basin is known for its high pollen content. Residing in this environment means learning to live with hay fever. My sinuses are usually only affected at the change of season. And I can keep this under control with an antihistamine. However, because I did not want to risk getting bronchitis, I started taking one every night at the beginning of the pandemic. This means I have now been on them for over a year. And I think my body may have become immune. At the end of July I had sore sinuses which I ignored. Which really was stupid of me as 3 days later I had a really bad post nasal drip. I treated this with over the counter medications that I had at home. But by the Saturday I had run out of night time medication and was still coughing.

I went to the chemist and spoke to the pharmacist on duty, asking her for something that would help me sleep. The lack of sleep was bothering me more than anything else. Well, whatever she gave me did nothing, for either my sinuses or my lack of sleep. I eventually had the Doctor come and see me and he prescribed antibiotics, a nasal spray and sinus medication. When I went back to the chemist I saw a different pharmacist and she listened to my needs. She gave me the extra strength, makes you go to sleep, tablets. And even though I did not get better straight away, at least I slept. And in my opinion, that goes a long way to helping you heal. What do you take when you have sinus issues or a head cold?

Banana Waffles

Serve this for brunch, or as a simple dessert

Makes enough for: 4 waffles

Equipment

  • Waffle Iron

Ingredients

  • 75 mls milk
  • 5 mls lemon juice
  • 2 eggs
  • 60 mls fructose, divided
  • 2 ripe bananas, mashed
  • 80 mls crème fraîche
  • 25 g salted butter, melted
  • 5 mls vanilla extract
  • 145 g flour
  • 2.5 mls baking powder

Method

  • Pour the milk into a small mixing bowl, add the lemon juice and set aside to curdle *
  • Crack the eggs into a mixing bowl and 30mls fructose
  • Whisk until pale and fluffy then add the remaining fructose
  • Whisk until pale and fluffy then add the bananas, crème fraîche, curdled milk, butter and vanilla
  • Whisk until well combined
  • Place the flour and baking powder into a large mixing bowl and stir to combine
  • Make a well in the centre and pour in the liquid ingredients
  • Whisk until just combined and set aside
  • Preheat your waffle iron and lightly grease
  • Make your waffles as per the manufacturer's instructions, making sure they are nice and golden brown
  • Serve plain, with maple syrup, bacon, or as I have done here, with yoghurt and fresh berries

* or you can substitute with 80mls buttermilk

  1. I am a big fan of bananas and love them in cooking or baking. Your waffles look and sound amazing. I usually take Z-cam at the first sign of a sniffle or sinus problem. It seems to help me if I catch it right away.

  2. I guess it’s luck of the draw which pharmacist you get. But I agree lack of sleep is the most annoying of the symptoms you mentioned. Hopefully the sinuses are a little bit better…

  3. Michael has chronic sinus problems as you know, Tandy. Nothing ever works. I get hay fever and use a nasal spray and take an antihistamine all year around. Interestingly, the pulmonologist took Michael of an antihistamine as she says it makes the mucus thick and sticky. I can’t tell if it will make a difference yet.
