Bakewell Scones

I am in love with all things ‘Bakewell’ having been introduced to the tart by my aunt when we first visited her in the UK. I decided to make a Bakewell jam, and used the jam on my Bakewell scones. Dried cherries are key to this recipe and if you cannot find them where you live, you can make your own.

Doing things ‘well’

When we got our long term Schengen Visa we were given a list of documents we needed to travel with. These were not needed for the first trip, but were compulsory for all subsequent visits. Dave and I have never been asked for any paperwork other than when we travelled in 2021. We had Schengen Visas issued by Germany, and no flight into the country. We were asked at Cape Town airport how we were getting to Germany, and where we were staying, and we needed proof of our accommodation. And when we landed in The Netherlands, the same questions were asked. This was totally understandable given the restriction on travel at the time. However, I am loathe to print out a horde of documents and waste all that paper if we don’t actually get asked for it.

Using Google to my advantage

And so I thought of a way to have ‘copies’ of everything required from us. We could be asked for an itinerary which is simple as I always create one in Google Sheets. I then ‘printed’ our airline tickets, proof of insurance and accommodation to .pdf. As well as proof of funds, our train tickets, and the barge confirmation. I uploaded all the .pdf documents to my Google Drive, and then linked them into the itinerary. While I was at it, I uploaded copies of our passports and Visa’s into my Google Docs folder. All of this is available off line and hopefully will be totally unnecessary. I also like that there is so much space on my Google Drive for me to be able to do this. Do you travel with printed pieces of paper? And if so, would you consider switching to the format I have used?

Bakewell Scones

This is a quick way to get your Bakewell fix

Makes enough for: 8 scones
All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 325 g self raising flour, plus extra for dusting
  • 150 g almond flour
  • 50 g xylitol
  • 5 mls baking powder
  • 100 g butter, cubed
  • 100 g dried cherries, roughly chopped
  • 100 mls milk
  • 5 mls lemon juice
  • 5 mls almond extract
  • 15 g flaked almonds

Method

  • Place a lined baking tray into the oven, and preheat the oven to 200° Celsius
  • Place the flour, almond flour, fructose and baking powder into the bowl of a stand mixer, and whisk to combine
  • Add the butter, and using the beater attachment, mix until it resembles bread crumbs
  • Add the cherries and mix to combine
  • Place the milk into a microwave safe jug and warm for 30 seconds
  • Add the milk to the flour, together with the lemon juice and almond extract, and use a spatula to mix until the dough comes together
  • Tip the dough out onto a lightly dusted surface, shape into a disc, and flatten to 3cm high
  • Press the almonds into the top of the dough and then cut the dough into 8 triangles
  • Remove the heated baking tray from the oven and place the scones onto the tray
  • Place the tray into the oven and bake for 18 minutes
  • Remove the tray from the oven and place the scones onto a wire rack to cool

      1. I have never had Bakewell tart before, but I’ve heard of it. The scones look delicious. I have no experience baking with any type of sugar substitute, but clearly you had great luck with it.
