Place the chocolate and cacao into a bain marie and melt over a medium to low temperature
Once melted, set aside to cool slightly
Place the condensed milk, butter, whisky, honey and vanilla into a small sauce pan
Heat over a medium to low temperature until the butter melts, stirring frequently
Slowly pour into the chocolate while constantly stirring the mixture
Continue stirring until the mixture is combined and the fudge starts to thicken
Pour into a brownie tin and set aside to cool
Place into the fridge overnight to firm up
for the ice cream
Place the milk and cream into a sauce pan and bring up to a simmer
When it has reached 37° Celsius, set remove from the heat
Place the egg yolks and honey into a mixing bowl and whisk until pale and thickened
Place into a heavy bottomed sauce pan and get over a low temperature
Stir continuously with a wooden spoon while slowly pouring in the milk
Continue stirring until the mixture thickens enough to coat the back of the spoon
Strain into a jug and place into the fridge overnight
Chocolate Fudge Ice Cream
Place the ice cream mixture into your churner and leave to churn for a few minutes
Then drop small amounts of the fudge into the churner until it is all combined
Once you have finished churning place the ice cream into a freezer container and place into the freezer for at least 3 hours before using

* if you do not drink, use an extract of your choice. ** I did not roll up all of the fudge into balls. I added some to milk to make hot chocolate. And used some to make fudge ice cream.
