I combined two recipes to make this chocolate fudge ice cream. So it goes without saying that it will take a little bit of effort. But it is so worth it as this ice cream is one of the best I have ever made.

When we moved to Gordons Bay we rented a property and decided the best thing to do would be to have a post box. At the time Dave was collecting his boys from Somerset West on a regular basis and he took one out there as none were available in Gordons Bay. But over time that became my errand to run, and it was out of my way. Eventually we could get a postal box closer to home and we took that, allowing the two to overlap by a few months. This year we have decided to close the box when it comes up for renewal. Most of our accounts come via email and we get very little posted to us. Making the annual cost a waste of money. I am slowly updating our postal address with work things being changed to our office address.

And anything private to our home address. All of this is being done in writing and the response has been laughable to say the least. One policy says I now live in Strand as Gordons Bay is not an option. And my insurance company changed my residential address to something else, leaving the postal address as is. And then they tell me it is my responsibility to ensure my contact details are correct. But how can I even do that if they cannot read? Or action the request with the correct information as provided to them? Do you get your post at home, at the office or to a postal box?

Chocolate Fudge Ice Cream
Ingredients
for the chocolate fudge
- 36 g dark chocolate, roughly chopped
- 14 g solid cacao, roughly chopped
- 50 g condensed milk
- 16 g salted butter, cubed
- 3.75 mls whisky (or alcohol of your choice)*
- 3 g honey
- 1.25 mls vanilla extract
for the ice cream
- 250 mls milk
- 250 mls cream
- 5 egg yolks
- 130 g honey
Method
for the chocolate fudge
- Place the chocolate and cacao into a bain marie and melt over a medium to low temperature
- Once melted, set aside to cool slightly
- Place the condensed milk, butter, whisky, honey and vanilla into a small sauce pan
- Heat over a medium to low temperature until the butter melts, stirring frequently
- Slowly pour into the chocolate while constantly stirring the mixture
- Continue stirring until the mixture is combined and the fudge starts to thicken
- Pour into a brownie tin and set aside to cool
- Place into the fridge overnight to firm up
for the ice cream
- Place the milk and cream into a sauce pan and bring up to a simmer
- When it has reached 37° Celsius, set remove from the heat
- Place the egg yolks and honey into a mixing bowl and whisk until pale and thickened
- Place into a heavy bottomed sauce pan and get over a low temperature
- Stir continuously with a wooden spoon while slowly pouring in the milk
- Continue stirring until the mixture thickens enough to coat the back of the spoon
- Strain into a jug and place into the fridge overnight
Chocolate Fudge Ice Cream
- Place the ice cream mixture into your churner and leave to churn for a few minutes
- Then drop small amounts of the fudge into the churner until it is all combined
- Once you have finished churning place the ice cream into a freezer container and place into the freezer for at least 3 hours before using

I have this with the whiskey! We have home delivery at one house and a PO Box at our vacation home. It’s about a mile away which was wonderful when we moved up there during the pandemic.

We have a vast selection of premium ice creams available, so I haven’t made it in ages, and in fact gave away the ice cream maker long ago. Your recipe looks delicious, though, It was like so many kitchen gadgets: used a lot and then abandoned. I’m thinking pasta machine, espresso machine, slow cooker (though I still use it occasionally) and also thinking of all the ones I did not buy.

I think I’ll have to get a churner, Tandy. My sister has one and her home made ice cream is delicious. We still get mail to our home address, but hardly ever as who uses the corrupt South African postal system?
Funnily enough, the banks still use the postal system! A churner is so worth it if you are going to make ice cream often 🙂
