Chocolate Oat Biscuits

Ingredients

rolled oats

coconut sugar

dried cranberries

bicarbonate of soda

milk chocolate
flaked salt for sprinkling
Method
Preheat the oven to 170° Celsius
Place the oats, flour, sugar and cranberries into a large mixing bowl and stir to combine
Place the butter and syrup into a small saucepan and melt on a medium to low temperature
Once melted, add the bicarbonate of soda and whisk to combine
Pour into the oat mixture and mix in
Place the chocolate into a glass bowl over a bain-marie and allow to melt over a medium temperature
Once melted, pour into the oat mixture and stir to combine
Using an ice cream scoop, place 12 balls of the mixture onto a lined baking tray
Using your fingers, flatten them, then sprinkle flaked salt on top
Place the baking tray into the oven and bake for 15 minutes
Remove the tray from the oven and leave the biscuits to cool on the tray for 10 minutes *
Transfer the biscuits to a wire rack to cool completely

* my biscuits spread a bit so I just used a palette knife to separate them
