Oats and the quality of the food we eat
Yesterday, a friend and I were discussing farming in America. It is so different to what we have here in South Africa. Here, we do not allow genetically modified corn or wheat. So, I never have to check our locally grown produce for a GMO label. She mentioned that a box of Cornflakes she had was made from GMO corn. Which in my mind meant it had to have been made in America. And why on earth are we importing this, when we grow corn in abundance, and manufacture our own breakfast cereals. In South Africa, we have Jungle Oats, which much be the most well known of the oat cereals. I had this nearly every day for breakfast in winter, growing up. Now I use rolled oats for our porridge, as well as our granola.
Making Chocolate Oat Biscuits
I decided in December that we would have a constant supply of biscuits to hand. These chocolate oat biscuits made for a great healthy treat. Oats are nutrient rich and can assist with lowering cholesterol. This in turn reduces the risk of heart disease, if oats form a regular part of your diet. If you are trying to lose weight, make oats a regular part of your breakfast menu. They contain a good amount of dietary fibre, a decent percentage of protein and are a great form of carbohydrates to make you feel fuller for longer. Oats are also mineral rich and contain several B Vitamins. Other than being used for breakfasts, oats can be baked into biscuits and bread, and processed for a dairy free alternative to milk. Most interestingly, they are added to barley to make the wort for an oatmeal stout.

Chocolate Oat Biscuits
Ingredients
- 95 g rolled oats
- 75 g flour
- 75 g coconut sugar
- 45 g dried cranberries
- 80 g butter
- 15 mls maple syrup
- 2.5 mls bicarbonate of soda
- 160 g milk chocolate
- flaked salt for sprinkling
Method
- Preheat the oven to 170° Celsius
- Place the oats, flour, sugar and cranberries into a large mixing bowl and stir to combine
- Place the butter and syrup into a small saucepan and melt on a medium to low temperature
- Once melted, add the bicarbonate of soda and whisk to combine
- Pour into the oat mixture and mix in
- Place the chocolate into a glass bowl over a bain-marie and allow to melt over a medium temperature
- Once melted, pour into the oat mixture and stir to combine
- Using an ice cream scoop, place 12 balls of the mixture onto a lined baking tray
- Using your fingers, flatten them, then sprinkle flaked salt on top
- Place the baking tray into the oven and bake for 15 minutes
- Remove the tray from the oven and leave the biscuits to cool on the tray for 10 minutes *
- Transfer the biscuits to a wire rack to cool completely

How come many of your recipes sound delightful but somehow ‘unhealthy’ when reading the title . . . and end up being virtual health foods as well as totally yummy when one gets to their recipes . . . 🙂 ! I would love one now after dinner . . .

What not to like about the combination of chocolate and oats? And I love the addition of cranberries giving some tartness and balancing out rich cookies.

That is so interesting. I wonder what was in the soy milk??
I had been using soy milk in my coffee for years, so it was a surprise to me. And it happened by sheer accident. I had to buy a different sort of milk one time and i noticed the stomach aches had gone!!
