Ingredients

baking powder, sifted
Method
Preheat the oven to 200° Celsius
Place the butter and sugar into a stand mixer bowl and cream together until fluffy
Add the vanilla, ground cinnamon, ground cloves and ground cardamom and beat to combine
Add a heaped tablespoon of flour, the espresso and egg and beat to combine
Add the raisins and give it a quick mix
Place the rest of the flour, coconut flour and baking powder into a bowl and whisk to combine
Add to the stand mixer in thirds, beating between each addition, until combined
Use an ice cream scoop and scoop 8 mounds onto a lined baking tray
Place the baking tray into the oven and bake for 15 minutes
Remove the baking tray from the oven and leave to cool for 5 minutes on the tray to cool
Remove the cookies from the tray and place onto a wire rack to cool completely
