I saw a recipe for Scottish coffee buns on Brookford Kitchen Diaries that I printed out to try. These turned into coffee cookies which were absolutely divine!

Making coffee cookies
I am a fan of coffee flavoured desserts, especially my Aunty Tilly’s ice cream. Dave however is not a fan of anything coffee flavoured, other than coffee. And between us, we have become coffee snobs. For years our morning started with instant coffee. But, in 2022 I bought a Vertuo Nespresso machine. Now, our mornings start with a carafe of high quality coffee. At work we have an ordinary Nespresso machine and during the week this is how we make our second cup. But at home, we have an espresso machine, and this is what is used during the day over weekends and holidays. And to me, during that time, both our morning and afternoon espressi need to be accompanied with something like my coffee cookies. I brewed an espresso to make these, to ensure the coffee was strong.
Coffee snobbery
The spices I used must have helped mute the coffee enough for Dave to not notice. He has however noticed how much he dislikes instant coffee. When we went away last December, the photographs of the place we stayed in showed a Nespresso machine. So, I packed the pods, but not our own holiday machine, to take with us. When we got there we discovered there was no Nespresso maker. And so, Dave and I had instant coffee each morning. He could not wait to get out to the closest town to visit a coffee shop, for a full strength espresso. I had to remind him that it took me years to convince him to get our first Nespresso machine! Something of course he will deny and say all along it was his idea ;). Do you drink coffee, and if so, what is your preferred brew?

Coffee Cookies
Ingredients
- 60 g butter, softened
- 50 g coconut sugar
- 2.5 mls vanilla extract
- 0.625 mls ground cinnamon
- 0.625 mls ground cloves
- 0.625 mls ground cardamom
- 120 g flour, sifted, divided
- 45 mls strong coffee, cooled
- 1 egg
- 50 g raisins
- 6 g coconut flour, sifted
- 5 mls baking powder, sifted
Method
- Preheat the oven to 200° Celsius
- Place the butter and sugar into a stand mixer bowl and cream together until fluffy
- Add the vanilla, ground cinnamon, ground cloves and ground cardamom and beat to combine
- Add a heaped tablespoon of flour, the espresso and egg and beat to combine
- Add the raisins and give it a quick mix
- Place the rest of the flour, coconut flour and baking powder into a bowl and whisk to combine
- Add to the stand mixer in thirds, beating between each addition, until combined
- Use an ice cream scoop and scoop 8 mounds onto a lined baking tray
- Place the baking tray into the oven and bake for 15 minutes
- Remove the baking tray from the oven and leave to cool for 5 minutes on the tray to cool
- Remove the cookies from the tray and place onto a wire rack to cool completely

I don’t drink coffee or tea…just water and bone broth. However, I do like to bake with coffee..the aroma is wonderful.

Your cookies look delicious Tandy, and we love any coffee flavoured sweets. I have mentioned before on my blog how hubby roasts our beans which we buy green from overseas and makes us a delicious flat white every morning with our coffee machine, and during the day when desperate. I am very spoiled.
I would love to be able to roast our own beans!
As a fellow coffee obsessive, I respect that commitment! I also adore my Nespresso; finding a machine in a hotel room many years ago is exactly how I got hooked. 🙂

I love coffee flavoured anything and i really want proper strong coffee! We have a pod machine tho i do feel guilty about the waste/environmental effects. Our local roaster does take them for recycling tho which is good. Your cookies sound great Tandy!

I am a huge coffee liver- in a mug, in cookies, cakes, everything! And these sound and look so amazing! I could do some serious damage to a batch if these!

We are not regular coffee drinkers in the home. However, when we are out in a restaurant we enjoy ending with a nice cup of decaf coffee. I think it’s mostly to linger the meal to enjoy of friend’s company. The cookies sound delicious and I am quite a fan of cardamom.
That is a good way to linger a little bit longer 🙂
