• place the marshmallows and the milk into a sauce pan and over a low heat stir until the marshmallows have melted
• add the Amarula and then remove from the heat
• Add the yoghurt and vanilla and stir well to combine
• place one strawberry at the bottom of a Martini glass (1 per person)
• evenly distribute the mousse between the 4 glasses
• place in the fridge until just before serving

to serve:

• place a meringue into the centre of each glass
• garnish each glass with another strawberry (that has been quartered)
• serve with some pink champagne
