Mint Rocky Road
Make this mintier by using mint flavoured biscuits
Makes enough for: 1 batch rocky road
Ingredients
- 150 g 80% dark chocolate drops
- 100 g butter
- 55 g fibre biscuits, broken up
- 135 g Aero peppermint chocolate, broken up
- 80 g Lindt Mint Chocolate, broken up
- 38 marshmallows, quartered
Method
- Place the dark chocolate and butter into a bowl over a bain-marie and leave to melt over a low temperature, stirring occassionally
- Remove from the heat and leave to cool for 5 minutes
- Add the biscuits and stir to combine
- Place the mint chocolates and marshmallows into a bowl
- Shake to mix them up then tip them into a silicone Bundt mould *
- Pour the melted chocolate into the Bundt mould and flatten the top as best as you can, using a palette knife
- Place into the fridget to set for 4 hours, remove and demould before slicing up to serve
Notes
* you can use any silicone mould, or do them in a brownie tin that has been lined with clingfilm
