Mint Rocky Road

This mint rocky road recipe is one you can save for Christmas! I made mine in time for us to enjoy it over December and every bite was full of mint flavour. I made a wreath shape using a silicone Bundt mould, just to make it look pretty.

Let’s talk about rocky road

The first time I ever came across this sweet treat was when my friend Bev whipped up a batch. This was well into my adulthood and I loved how simple it was to make. She used milk chocolate, marshmallows and biscuits, and it was really sweet. I then came across an ever sweeter version when Dave and I shared a slice of Tiffin in Scotland. Usually prepared in a tray, it is served in chunks, much like a brownie. A while back, Sammie shared her recipe for one shaped like a wreath, for Christmas. The idea really sat in my head until I decided to make my minted version.

A variety of ingredients

I much prefer using dark chocolate as the binding ingredient for a rocky road. The bitterness of the chocolate is offset by all the other ingredients you can add in. Marshmallows to me are an optional ingredient and for ease, if you add them, the mini ones are easier to work with. Biscuits are a must have ingredient. And the nice thing here is you can use any flavour of biscuit you like. Think of ginger biscuits to add extra flavour. Or Oreos to add some contrast. You can add candied fruit for punch of flavour, or freeze fried fruit for texture. And talking of texture, what about toasted coconut flakes? And then there are a variety of nuts which can be added after toasting them and chopping them up.

This is all about the chocolate! I used plain biscuits for crunch, and marshmallows to give a contrast in the mouth feel. For the flavour I broke up a slab of Aero Peppermint chocolate, and Lindt Mint Chocolate. Melted 80% dark, sugar free chocolate was used to bind this all together. You have to be a fan of mint to make this, and if you want to ramp up the mint aspect, I suggest you use biscuits that have a mint flavour.

Mint Rocky Road

Make this mintier by using mint flavoured biscuits
Recipe Category: Sweets
Makes enough for: 1 batch rocky road
All Rights Reserved: An original recipe from Lavender and Lime

Ingredients

  • 150 g 80% dark chocolate drops
  • 100 g butter
  • 55 g fibre biscuits, broken up
  • 135 g Aero peppermint chocolate, broken up
  • 80 g Lindt Mint Chocolate, broken up
  • 38 marshmallows, quartered

Method

  • Place the dark chocolate and butter into a bowl over a bain-marie and leave to melt over a low temperature, stirring occassionally
  • Remove from the heat and leave to cool for 5 minutes
  • Add the biscuits and stir to combine
  • Place the mint chocolates and marshmallows into a bowl
  • Shake to mix them up then tip them into a silicone Bundt mould *
  • Pour the melted chocolate into the Bundt mould and flatten the top as best as you can, using a palette knife
  • Place into the fridget to set for 4 hours, remove and demould before slicing up to serve

Notes

* you can use any silicone mould, or do them in a brownie tin that has been lined with clingfilm

  2. this sounds great Tandy. I love mint chocolate, and Aero bars. Great idea to use dark chocolate; I tend to use Lindt 70% for everything. This reminds me of the hedgehog slices we used to make as kids. You threw in marshmallows and broken up biscuits and chocolate and so on. Have a fab month.

  3. Mint is one of my favourite flavours, we would love this. I think it would make a fabulous dessert for any time of year. I also like it’s not dependant on nuts for texture, crunch etc. Thanks Tandy, I’m thinking I must make this.
