Sometimes, the simplest of recipes, provides you with the best of treats. And this recipe for cardamom ice cream is no exception. Using just 3 ingredients, this no churn ice cream is packed full of flavour, and is the perfect dessert to enjoy on its own, or with a slice of chocolate cake. I served this ice cream with warm cinnamon dumplings.

Let’s talk about cardamom
Cardamom is one of my favourite spices to use in desserts. More commonly associated with curries from the Indian subcontinent, it is the small black seeds one uses. The papery outer shell varies from light green to dark brown. White cardamom is actually bleached green cardamom and can be found across India and Malaysia. Despite being one of the most expensive spices by weight, very little is needed for flavour. The brown shelled variety is known as black cardamom and is found in the Himalayas. This variety is smokier in aroma and has a cooling effect one gets from mint. Cardamom should be left in the pods until used, and only then are the seeds removed. If a recipe calls for whole cardamom, I suggest crushing them first. If you cannot find whole cardamom then substitute 10 pods to 7.5mls of ground cardamom.
Using cardamom in your kitchen
Cardamom is an essential ingredient in Indian masalas as well as Thai curry pastes. In the Nordic countries, the spice is used for baking, and in India many sweet treats will include cardamom. And for those of us that like a tipple, it is often one of the spices used to make gin, and bitters. When using cardamom in your kitchen keep in mind that it is has a scent of eucalyptus, and can be used like bay leaves and rosemary. It is part of the ginger family and can impart citrus flavours to a dish, depending on where it is grown. All these flavour profiles work well with fatty ingredients. You can pair the spice with almonds, apricots, bananas, butter, coconut, cream, chocolate, mango and pears. For savoury recipes think of bacon, carrots and lamb. Marry with cinnamon, coffee, coriander seeds, ginger, rose, saffron and vanilla.

Cardamom Ice Cream
Ingredients
- 500 mls whipping cream
- 5 mls ground cardamom
- 395 g condensed milk
Method
- Place the cream and the cardamom into a stand mixer bowl and whisk to soft peaks
- Add the condensed milk and whisk to combine
- Pour into a freezer proof container and freeze overnight before serving

Lovely to see you using cardamom which surely is the Mother Spice in Estonian baking! I doubt there are many bread or bun or biscuit recipes where the spice is not used, so have known its taste literally since babyhood . . , yes, and I have oft used it in making Indian spice mixes. . . so it is interesting it used in another way 🙂 !
