This chocolate ginger slice is made from a base of condensed milk and chocolate, to which I have added nuts and cookies for texture, candied ginger for spice and dried cherries for something different. Use this recipe as a base and create your own flavour profile.

When an idea latches on
Sometimes, I make a recipe and immediately I think of other flavour profiles. It could take me months, or even years to get around to making the new version. And I might even take two recipes and meld them into one. The inspiration for my chocolate ginger slice came from the mint rocky road I made in 2024. But, wanting to make it completely unique, I decided to use condensed milk as the base. This is one of the easiest sweet treats to make at home. And I usually have a jar of this in the fridge. I made this during the heatwave in December of 2025 and kept the large slice in the fridge and cut pieces off every few days. These were kept in the freezer to enjoy every night after dinner. What flavour would you make, other than ginger and mint?
When moving is better than standing still
Every morning before I leave for work, I ask WAZE which is the best route to take. The other morning I was given two options with the same time, and decided to take the top road as it has less robots. It is longer in distance, but being able to stop less, and travel at a higher speed is worth the extra mileage. Well, who knew there would be an accident after I made my choice? I ended up taking an even longer detour as I cannot stand sitting in a traffic jam. It was slow going, but moving was way better than standing still. And even so, this trip was double the time it normally takes when the traffic is flowing smoothly. Do you use a Map App for your daily commute?

Chocolate Ginger Slice
Ingredients
- 397 g condensed milk
- 330 g dark chocolate drops
- 100 g butter
- 200 g candied ginger cookies, broken up
- 100 g blanched hazelnuts, lightly toasted and roughly chopped
- 60 g flaked almonds, lightly toasted
- 40 g dried cherries
- 40 g candied ginger, thinly sliced
- oil for greasing
Method
- Place the condensed milk, chocolate and butter into a glass bowl and set over a bain-marie over a medium to low temperature
- Leave until the chocolate and butter melts, stirring occasionally
- Remove from the heat and add the cookies, hazelnuts, almonds, cherries and ginger
- Stir until everything is coated in the chocolate
- Oil a loaf tin or terrine mould with a little bit of oil, and line with cling film
- Pour the mixture into the tin or mould, smooth the top down with a palette knife, cover with cling film and place into the fridge until set
- When the tart is firm, you can cut into chunks to enjoy
- Keep the chunks in an airtight container in the fridge

This looks delicious Tandy, and a little like Rocky Road, or a flourless chocolate slice. Such a great idea to have this sitting in your frig, just waiting. Perfect for Easter too.

That looks heavenly! I was just craving something like fudge, and this is way better than just the plain candy. With all the fruits and nuts, I can almost justify it as being a healthier choice. 😉
And it is easy to make it vegan!
I haven’t used WAZE before this year. Now, I have to take Michael to University in Sandton in the morning traffic. Now we use it to avoid unexpected traffic issues over and above what we experience daily. Thanks for the recipe. I have made various slices before.
Some days I use it to no avail, like yesterday when a robot was out, and no-one knew what to do when they got to it!

Oh no – sorry to hear about your traffic woes. Yes, I use apple maps to get to work. My partner makes fun of me as he says I know the way, but I use it mostly for traffic reasons. Also, this slice is delicious – having this sitting in the fridge for when that sweet tooth hits is such a great idea. I would probably add some pistachios to mine.
