These chocolate macadamia biscuits are a healthy, gluten free treat. I made a small batch, but you could easily double up the recipe. They will keep well if stored in an airtight container and make a great lunch box addition for children.

When biscuits are good for you
We often think that anything sweet cannot be good for you. But, I am all for healthy treats, and I think these chocolate macadamia biscuits fit the bill. The base for these biscuits are rolled oats, which are rich in complex carbohydrates, plant-based protein and fiber. Fiber in the form of beta-glucan is essential for good gut health. In equal amounts is almond flour which contains healthy fats, protein and fiber as well as Vitamin E and other essential minerals. Macadamia nuts are great for heart health and help reduce inflammation. Dark chocolate with a cocoa content of over 70% offers a great source of antioxidants, and supports heart and brain health. Coconut oil contains medium-chain triglycerides which might assist in weight loss. All of these ingredients, together with maple syrup and an egg results in a gluten free treat worthy of baking.
My baking obsession
If I had my way, I would bake every single day. The only problem I have, is who to share the bakes with. So, I am now volunteering my baking for desserts when we go out to friends. Most of my friends do not like cooking, and like to bake even less. So, instead of a hostess gift, I take dessert. I also bake biscuits and take a container of them to work. We often have people pop in, so it is great to be able to offer them coffee and something sweet. As these were so healthy, I replaced my breakfast bowl of granola and yoghurt with one (or two) each morning. I also made several batches to make sure I was 100% happy with the texture.

Chocolate Macadamia Biscuits
Ingredients
- 150 g rolled oats, lightly toasted
- 150 g almond flour
- 80 g macadamia nuts, lightly toasted and roughly chopped
- 50 g dark chocolate
- 32 g coconut oil
- 60 mls maple syrup
- 1 egg, lightly beaten
Method
- Preheat the oven to 180° Celsius
- Place the oats, almond flour and nuts into a mixing bowl and stir to combine
- Place the chocolate and coconut oil into a microwave safe bowl and blitz in 30 second burts until melted
- Add the syrup and egg and mix to combine
- Pour this into the oat mixture and mix until everything is well coated
- Use an ice cream scoop to scoop out balls of the mixture, and place onto a lined baking tray, leaving space in between each one
- Flatten the balls with a fork and place into the oven to bake for 15 minutes
- Remove the baking tray from the oven and transfer the biscuits to a wire rack to cool completely

Lovely recipe Tandy, of course here in Australia we love macadamia nuts. I have all the ingredients in stock except for the nuts, but easily rectified. Looking forward to baking these.
I always thought that Macadamia nuts were Australian, until I brought some back from Perth for my mom to discover they were farmed in South Africa 😉

Macadamia nuts are addictive. I had to stop buying them for a while! But I might grab some again just to try these cookies.

Hi Tandy, I started baking less because I also have no one to share the treats with now. I used to take baked goods to work but that all stopped in 2017 when the firm changed following a lot of bad press. It’s never been the same again. At home, my sons aren’t here that much now to eat baked goods. I realize that baking was a life phase for me.
Luckily I can still bake to take to work as I find the preciseness of baking quite therapeutic 🙂
