Are you a fan of mint chocolate?
I absolutely love the combination of mint and chocolate, and for me it has to be dark chocolate with mint nibs in it as my first choice. I think my first ever experience of this combination was an After Eight. Those really thin dark chocolate blocks with a mint centre. There are so many varieties in this combination, some of which I have never heard of. Lindt Mint Intense is my favourite, followed in close second by Canderel Dark & Mint. Making mug cakes
Looking for a quick fix for your sweet tooth craving? Or a decadent dessert after a meal that takes no time at all? Well, you need look no further than this recipe for mint chocolate mug cake. Kate Calder has put this recipe into her chapter titled chocoholics and it is the perfect description of this mug cake. As with all mug cake recipes, you can only make one at a time. And even though this recipe is for one person, it is so rich you could share it with a willing partner. Or prepare two mugs and bake one after the other, as a little cooling time will allow the chocolate on top to melt.
Do mug cakes need ice cream?
I think this is a personal choice, and I prefer my mug cakes just as they are. I don’t particularly like cake with anything, unless frosting is necessary for the cake itself, like when you bake a carrot cake. But, creating a hole in your mug cake and adding ice cream could take it to a whole new dessert level. Same as what one would experience when eating a soufflé.

Mint Chocolate Mug Cake
Ingredients
- 36 g xylitol
- 21 g flour
- 5 g cocoa powder
- 1.25 mls baking powder
- 30 mls canola oil
- 15 mls milk
- 2.5 mls vanilla extract
- 1 egg
- 2 x 10 g mint chocolate blocks
- flaked salt to garnish
Method
- Place the xylitol, flour, cocoa powder and baking powder into a 300ml mug
- Mix together using a fork then add the oil, milk, vanilla extract, and egg
- Mix until just smooth then place one chocolate block on top of the batter
- Place into a 900W microwave and microwave on 100% power for 1 minute and 10 seconds
- Remove from the microwave and place the other chocolate block on top of the cake and as soon as it starts to melt, sprinkle with some flaked salt and dive in

Yes please! I love choc-mint flavours. Hubby does not, so a mug dessert sounds perfect. One of my fave choc bars is Peppermint Crisp – all that flavour!
