Happiness In A Mug Cake

What I made:

I decided to make three mug cakes to share between four of us. First up was the mint chocolate which by far was Hannah’s favourite. This came in second place for me. It is rich and decadent and perfect for dinner parties. For the rest of us, we decided the bakewell was the best. The orange and almond is a gluten free mug cake and I did not choose the best mug to show it off. I loved the crumb of this cake.

My impressions:

Who knew there could be so many variations on the basic mug cake? If you make any of the recipes I am going to share, keep in mind that a medium UK egg weighs 53-63g which is the same as the extra large eggs I use for my recipes. You need a 300ml mug to make these, and I think they should be shorter mugs, rather than the tall one I used for the orange and almond mug cake. The recipes were cooked in a 1000W microwave and mine is 900W so I adjusted the cooking time by 10 seconds. This will be a learning curve for you if you buy the book.

  1. When I was a young mom and busy with the kids, my greater pleasure was making myself a mug cake in minutes when the kids napped! I usually made it with chocolate chips or blueberries. It was great for portion control too.. no leftovers! I love the idea of chocolate mint and of course the gluten free almond one is on my radar. Thanks Tandy!
