Salted Dark Chocolate Biscuits

Ingredients

softened butter

coconut sugar

80% cocoa solid dark chocolate drops, roughly chopped if they are large
salt flakes for sprinkling
Method
Place the butterm fructose, sugar and vanilla into a stand mixer and cream together until fluffy
With the mixer set to the lowest speed, gradually add the flour, scraping down the sides if necessary
Add the chocolate and beat until completely mixed in
Bring the dough together using a spatula then divide in 3 and wrap each piece in some cling film, shaping each one into a log 5cm thick
Place into the fridge to chill for at least 2 hours, or overnight if possible
Remove the dough from the fridge and set aside for 10 minutes
Using a serrated knife, cut 2cm slices and place onto a lined baking tray
Sprinkle salt on top of each piece of dough and place into the fridge while you preheat the oven to 180° Celsius
Place into the oven and bake for 20 minutes
Remove from the oven and leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely
Store in an airtight container and bake in batches of 3 if you want
