These salted dark chocolate biscuits are absolutely delicious. I would be tempted to always have some of the cookie dough in the fridge to keep our glass jar well stocked. And I think once you have tried these, you will agree. Use the best quality chocolate you can afford when you make these. And if you do, let me know.

Everything I love about blogging

Every now and then I think I should stop blogging. It is a lot of hard work, and for ages all I did was create recipes for this space. When my creative juices stopped flowing, I started printing off recipes that I thought looked good to me. Last year I worked my way through the file in the order they were printed off. If something was not in season, I just skipped the recipe. Then in December I really got stuck in to baking and cooking what I had saved. It is being able to spread the love and share other blogs, that makes this space something great for me. It is why I love blogging. And sometimes I see a recipe somewhere, and am inspired to create something unique, and to my style of cooking.

Salted Dark Chocolate Biscuits

Karen (Back Road Journal) has shared two iterations of these salted dark chocolate biscuits. I only realized I had printed both off when I came to making them in December. I decided which of the two recipes I preferred, and think I struck gold with this one. The biscuits were amazing, and everything about this recipe worked for me. And, the added bonus was I could create an ice cream sandwich with them. This is something I have wanted to do for a long time, just to experience the texture sensation of eating one. It makes for a very generous dessert, and a great treat for a hot day. The biscuits kept very well in an airtight container which meant we could indulge in one a day.

Salted Dark Chocolate Biscuits

These are the perfect treat

Makes enough for: 24 biscuits
All Rights Reserved: Adapted from Back Road Journal

Ingredients

  • 255 g softened butter
  • 100 g fructose
  • 50 g coconut sugar
  • 5 mls vanilla extract
  • 295 g flour
  • 170 g 80% cocoa solid dark chocolate drops, roughly chopped if they are large
  • salt flakes for sprinkling

Method

  • Place the butterm fructose, sugar and vanilla into a stand mixer and cream together until fluffy
  • With the mixer set to the lowest speed, gradually add the flour, scraping down the sides if necessary
  • Add the chocolate and beat until completely mixed in
  • Bring the dough together using a spatula then divide in 3 and wrap each piece in some cling film, shaping each one into a log 5cm thick
  • Place into the fridge to chill for at least 2 hours, or overnight if possible
  • Remove the dough from the fridge and set aside for 10 minutes
  • Using a serrated knife, cut 2cm slices and place onto a lined baking tray
  • Sprinkle salt on top of each piece of dough and place into the fridge while you preheat the oven to 180° Celsius
  • Place into the oven and bake for 20 minutes
  • Remove from the oven and leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely
  • Store in an airtight container and bake in batches of 3 if you want

  1. Hi Tandy, these biscuits look divine. Stopping blogging is not something I’ve considered to date, I enjoy this community, especially the poetry community, a great deal. A lot of the writers have disappeared recently but the poets and bakers go on. I think it depends on your reasons for blogging.

  2. I love a salty sweet treat. Salt goes so well with chocolate. I often think about giving up blogging too but i guess it gives me a lot of joy for all the hard work involved 🙂
