Spiced Apple Cake
This delicious apple cake is subtly spiced and very moist

Ingredients

salted butter, softened

ground cardamom, divided

Method
Preheat the oven to 170˚ Celsius
Place the butter and fructose into a stand mixer bowl and whisk until pale and fluffy
With the mixer running, whisk in the eggs one at a time
Zest the lime, and set the zest aside, then add the juice to the stand mixer
Do not discard the limes
Place the flour, almond flour, baking powder, and zest into a mixing bowl
Add 5mls of the cardamom and mix to combine
With the mixer running, slowly pour in and mix until just combined, scraping down the sides if necessary
Pour the batter into a lined 20cm round, deep baking tin and smooth the top as best you can
Cut the apples into quarters and remove the cores
Rub the flesh with the lime to prevent them from discolouring
Place the apples onto a chopping board, cut side down, and cut thin slices into each piece, without going all the way to the bottom
Place the apple quarters around the edge of the tin, with the skin facing the edge
Place the coconut sugar and remaining cardamom into a bowl and mix
Pour into a tea strainer and sprinkle over the top of the cake
Place the tin into the oven and bake for 45 minutes
Remove from the oven and cover the top of the tin with foil
Return to the oven for a further 10 minutes
Remove the tin from the oven and leave to cool for 10 minutes
Transfer to a wire rack to cool completely before slicing
