Some things are worth waiting for, and this spiced apple cake is one of them. You need to wait for it to cool before slicing into it. But you will be grateful you did as that will help retain the moisture of this delicious treat.

In my first management position, my boss told me that I had to be aware of everything that was going on around me. Our restaurant could seat 120 people and it was vital as the manager that I kept on top of everything. This is a lesson I have taken with me, and a trait I look for in managers when we go out to eat. Last month a friend and I went out for lunch. I ordered a simple sandwich of roasted vegetables on sourdough with hummus and smoked cheese. When it arrived at the table there was no hummus on the bread. So I asked for the manager and told her that this ingredient was missing. She took my plate away telling me she would bring it right back with the hummus.

After a wait that was far too long in my opinion I went to find her and she told me she had to go and buy hummus. So instead of telling me what was going on, she just left me with no meal. My lunch came back and this time there was no cheese! I took the plate to her and told her that the order was still wrong. Her response to this was that she was new at the job. And then she proceeded to shout at the kitchen staff in an open kitchen. At this point I asked for her manager as I was very unimpressed with her service. He came to see me and I explained the situation to him, and he agreed that she was in the wrong. We got our meal on the house which was not the aim of the complaint but appreciated.

Spiced Apple Cake
Ingredients
- 125 g salted butter, softened
- 150 g fructose
- 2 eggs
- 1 lime
- 130 g flour, sifted
- 30 g almond flour
- 5 mls baking powder
- 7.5 mls ground cardamom, divided
- 2 apples
- 15 mls coconut sugar
Method
- Preheat the oven to 170˚ Celsius
- Place the butter and fructose into a stand mixer bowl and whisk until pale and fluffy
- With the mixer running, whisk in the eggs one at a time
- Zest the lime, and set the zest aside, then add the juice to the stand mixer
- Do not discard the limes
- Place the flour, almond flour, baking powder, and zest into a mixing bowl
- Add 5mls of the cardamom and mix to combine
- With the mixer running, slowly pour in and mix until just combined, scraping down the sides if necessary
- Pour the batter into a lined 20cm round, deep baking tin and smooth the top as best you can
- Cut the apples into quarters and remove the cores
- Rub the flesh with the lime to prevent them from discolouring
- Place the apples onto a chopping board, cut side down, and cut thin slices into each piece, without going all the way to the bottom
- Place the apple quarters around the edge of the tin, with the skin facing the edge
- Place the coconut sugar and remaining cardamom into a bowl and mix
- Pour into a tea strainer and sprinkle over the top of the cake
- Place the tin into the oven and bake for 45 minutes
- Remove from the oven and cover the top of the tin with foil
- Return to the oven for a further 10 minutes
- Remove the tin from the oven and leave to cool for 10 minutes
- Transfer to a wire rack to cool completely before slicing

I love the flavour of cardamon with apple. This apple cake does look delicious and interesting that you use fructose as a sugar substitute. Do you use the same amount of fructose as you would sugar? I should do that more often as I presume it doesn’t affect the taste at all. Thanks for sharing Tandy.
With most of my recipes you can use the same amount of sugar as fructose 🙂
Cardamom is really a delicious spice, which I’ve been meaning to use more. I bought some ground cardamom as it’s hard to work with the pods. Now I have to try some recipes– this looks very delicious.

Cardamon is as loved as an ingredient here as cinnamon, not to mention apples. A great looking recipe and one that will be tried.
Good for you to call out the big boss, my belief is one should always speak out when an order is wrong or food is substandard. How else can they improve if the management doesn’t know there is a problem.

Spiced Apple Cake is pure comfort food to me, and one of my husband’s absolute favourites. 🙂 Your restaurant experience sounds quite vexing. Hopefully, by speaking up, you will help the lady to calm down, focus on her duties, and do a much better job next time.
