Ingredients
200gsoftened salted butter
200gfructose
10mlsvanilla extract
1egg, lightly beaten
400gflour, sifted, plus extra for dusting
Method
Preheat the oven to 180° Celsius
Place the butter, fructose and vanilla into a mixing bowl and beat until combined
Add the egg and mix on a slow speed until fully incorporated
Add the flour, in small batches, while mixing, until a dough is formed
Turn out onto cling film, flatten into a disc shape, and cover
Refrigerate for 30 minutes then turn out onto a generously floured surface
Roll to 5mm thick and cut out shapes using cookie cutters *
Lift the cookies with a palette knife and place onto a lined baking tray, leaving a space between each one
Place into the oven and bake for 15 minutes
Remove from the oven and transfer to a wire rack to cool completely
These will keep for up to 8 weeks in an airtight container
Notes
* you can also cut out shapes using templates, using a sharp knife or cutting wheel. ** you can substitute 30mls cocoa powder for 30mls flour, or add the finely grated zest of citrus fruit (2 lemons, 1 orange etc.), or add 5mls ground cinnamon or a pinch of ground nutmeg or ground ginger.
