Vanilla Cookies

Hannah came to bake with me and we made vanilla cookies. This is a simple recipe that works well for cutting out. You can add sprinkles etc. as a topping or change the flavour profile as detailed in the recipe.

Never before has reading fine print become more important than now. And to add to that caveat, I suggest you print everything out. Last January Turkish Airlines had a sale where ticket prices were reduced by 40%. I kept the email which detailed all the specifics of the offer, as well as an email stating that cancellation costs would be $260. I didn’t print these out, nor did I make a note of the fare conditions for the class we had booked. Unfortunately for me, my laptop was stolen and I have no record of these emails. I can easily find the offer by asking the Google Machine. But I cannot prove the cancellation costs. When the world shut us out I preempted the inevitable and called Turkish Airlines. I asked for the cancellation costs and was given an amount of $2060. This left a hollow feeling in my stomach.

I am not sure when the extra zero crept in and I didn’t know what to do. Despite taking out travel insurance that covers us for cancellation, we are not actually covered. This makes no sense to me as, if the airline cancels our flights, we should be entitled to compensation. Especially if the refund will not be made in full. Not wanting to lose one more cent to this pandemic I decided to email the airline for clarification. The reply came, in our favour stating the following: If the airline cancels the flight, you are entitled to a full refund, providing once your receive the notification you will cancel prior to your original departure. Now all we had to do was wait for the flight to be cancelled, or for us to travel. Do you print out important emails?

Vanilla Cookies

These are the perfect home baked treat

Makes enough for: 1 batch cookies

Ingredients

  • 200 g softened salted butter
  • 200 g fructose
  • 10 mls vanilla extract
  • 1 egg, lightly beaten
  • 400 g flour, sifted, plus extra for dusting

Method

  • Preheat the oven to 180° Celsius
  • Place the butter, fructose and vanilla into a mixing bowl and beat until combined
  • Add the egg and mix on a slow speed until fully incorporated
  • Add the flour, in small batches, while mixing, until a dough is formed
  • Turn out onto cling film, flatten into a disc shape, and cover
  • Refrigerate for 30 minutes then turn out onto a generously floured surface
  • Roll to 5mm thick and cut out shapes using cookie cutters *
  • Lift the cookies with a palette knife and place onto a lined baking tray, leaving a space between each one
  • Place into the oven and bake for 15 minutes
  • Remove from the oven and transfer to a wire rack to cool completely
  • These will keep for up to 8 weeks in an airtight container

Notes

* you can also cut out shapes using templates, using a sharp knife or cutting wheel.
** you can substitute 30mls cocoa powder for 30mls flour, or add the finely grated zest of citrus fruit (2 lemons, 1 orange etc.), or add 5mls ground cinnamon or a pinch of ground nutmeg or ground ginger.

  1. To answer your question: Nope we never print out important emails but I think we should! Love the name Hannah and how she made these vanilla cookies with you. I think a heart cut out would be ideal for Valentine’s Day! And I can only imagine the possibilities with frosting and sprinkles =) The kids will love these.

  2. Fortunately, we have not had to cancel any flights. We have cancelled holiday accommodation and that has not always gone well. No Terence makes sure we can cancel and get a refund if we can’t travel due to Covid.
