Ingredient Challenge: Onions, Leeks, Carrots And Celery
This week, the challenge is to use the following ingredients: onions, leeks, carrots and celery. In all countries one can find a sofrito of sorts using a base of at least 3 ingredients. Usually these include onions and celery or onions and carrots. Sometimes you will find tomatoes in the mix, but never yet have I found leeks to be included. To use all four of these ingredients may indeed prove to be a challenge, but that is the point of this. To find a recipe or make one up using onions, leeks, carrots and celery. My first thought is soup but that would be far too easy and not much of a challenge. Saying that, with a little bit of shin and some home made stock this would be a great winter comfort bowl of goodness. The soup would have an amazing depth of flavour which could be enhanced by the addition of fresh herbs just before serving. I am looking forward to what you all come up with.
