What I made:
I made the pesto as I have an abundance of herbs in my salad garden. I liked using sunflower seeds as opposed to the more expensive pine nuts. The felafel cauli bites were amazing, and something I will make again. I made quite a bit of the felafel spice blend (p100) for these, and used it over the course of a few days. Despite my previous bad results using erythritol, I went ahead and bought a bag to make the cookies on page 202. Only because Inè claims that this sweetener is the only one to harden as it cools. First off the recipe did not work, and secondly the cookies had a weird taste. Carli told me it is the erythritol that gives off that taste, but I will test another recipe using it.
I found her thought progression from the first book to this one interesting, even if I cannot follow this regime. There is an avoid list for carbohydrates in the recipe book which includes quinoa, raw honey and papayas, yet some of the recipes contain these ingredients. This could be very confusing to first time followers of this way of eating. It is well known that increasing fibre intake has great health benefits, including weight loss. The dietary information may be overwhelming for a lot of people. There are very few photographs which reduced my visual choice of recipes.
