December 2022 Showcasing In My Kitchen

December 2022 turned out to be an amazing month. Work was busy enough to keep me out of trouble and for that I am grateful. We installed a solar system at home to ensure that rolling blackouts don’t affect us. Dave, John, Dorothy and I went away for 3 nights to celebrate wedding anniversaries. It was our twentieth which is quite a milestone in my opinion. We had a lazy Christmas day eating, drinking and talking and celebrated with the kids on the 27th. Dinners out were included in the agenda. And to make our year end with happy hearts we finalised our plans for Italy in May. Mark and Eva will be joining us, and we cannot wait!

In My Kitchen

The month started with me making salt and pepper hake. The seasoning was so good I have used it on the skin of fish multiple times since then. I peeled chickpeas to make a creamy hummus – so worth the effort if you ask me. Dave and I indulged in a seafood paella – a recipe I created for a friend for her to make for a birthday celebration. I love making new pasta shapes, and agnolotti al plin was this month’s’ endeavour, and soon I will be sharing another recipe with you for larger ones. For breakfast I enjoyed quinoa granola and for a filling lunch we had a vegan bowl with sunflower seed dressing.

New in my kitchen in December 2022

I did a little bit of shopping in the UK in June. I bought cod roe to make taramasalata which was worth making from scratch. The dark rye flour is not as dark as I wanted. I am looking for pumpernickel flour which I will carry on searching for when we are overseas. The Cotswold Crunch and AP Flour were on special when we visited Diddly Squat Farm and I could not resist working with new flours which are so different to the stone ground flour I use at home. I have never tried a Jaffa Cake, so a box was transported back home to devour with James and Hannah. The dinosauri are for Hannah as well, when she visits and feels like a meal. I like my horseradish sauce to be super strong, and this one is nearly there but not quite.

  3. Curious me always loves taking a peek at the ingredients which have interested other likeminded individuals . . . especially if they live in another country. Have not been back to England forever so your ‘list’ was especially interesting . . . since I rarely bake my eyes were on the cod roe which used to be freely available here but seems to have disappeared . . . and the horseradish – oh yes, I love it strong also . . .

  5. Happy anniversary to you. I love the look of that hprseradish sauce, that’s a favorite thing of mine. Never have made hummus from scratch but I am loving an everything bagel hummus now. Just posted it on my In My Kitchen submission.

  6. Happy 20th!! congrats on all that effort (just kidding). Mr P and I have been married 37 years this year. How did that happen?! Love Jaffa cakes. Okay call me a lazy sod but i never peel chickpeas. I just use the canned ones and chuck ’em in the processor 🙂 Have a great year. cheers!
