Ingredient Challenge: Leeks, Sundried Tomatoes, Olives And Basil

I am going to continue with these challenges until I no longer feel challenged. If you decide to take part, please let me know by leaving a comment here. This week the challenge is to cook something using the following ingredients: leeks, sundried tomatoes, olives and basil.

Why these choices

I love using leeks, especially as a replacement for onions where the onions could overwhelm the dish. They also make a great vegetable to eat on their own. Sundried tomatoes can also be overpowering if not used in moderation. I love them baked into bread and served with pasta but you need to keep the amount you use in check. Olives are another ingredient you will find in my pantry and any given time. I cannot be without olives even if we don’t eat them every night. This goes back to my childhood and is an ingredient that always reminds me of my father. I try and grow my own basil and sometimes I have had great success. But it is very windy where we live and I have probably planted more plants than I can count on both my hands. That does not mean I won’t persist.
