August 2021 was a stamp your foot sort of month. It started off pretty well, but then a friend got Covid. We see a lot of him, and I had spent a fair bit of time with his wife who also got sick. Then my one staff member was booked off work with suspected Covid. The day he returned a negative result, my other staff member returned a positive one. All I can say is that I am grateful for masks, sanitising and social distancing. I feel extremely relieved we are both fully vaccinated.
Lots of sweet things in my kitchen
Moving swiftly along to all things sweet, August was a very sweet month. I made peanut butter choc chip cookies as well as chocolate fudge truffles. Hannah gave these her nod of approval. I baked lemon meringues to go with chocolate fudge ice cream. The meringues were awarded a star baker award so that was a highlight for me.
International Scone Week 2021
I contributed 3 of the 12 recipes to this years ISW2021. They were buttermilk scones, traditional scones and pistachio scones. All very delightful in my humble opinion.
And to end off August 2021
I made only a few savoury dishes to end off the month. They were chicken spring rolls, nuoc cham and soft cheese. The Vietnamese dipping sauce is for rice paper rolls that I will share in September. and the soft cheese was another version of ricotta. I have been making quite a few batches of this using different recipes, while I work on a beetroot tart recipe.
One thing not in my kitchen
I bought this microwave mat home to use in our microwave as I thought it would be perfect. Dave told me to take it right back as it was unnecessary. Not that he paid for it! But I listened of course. He told me that the bottom rack can be taken out of our oven when I want to blitz mugs of milk for hot chocolate. The irony is that we could have used it at work to cover the soup we heat up for winter lunches. But instead he had to go out and buy a fancy bowl for that.
This is my September submission to the #IMK series, hosted by Sherry. Each month bloggers around the world gather to share what is new in their kitchens.

I am going away tomorrow and I am not sure how much time I will have for blogging. Please forgive me if I don’t get to your comments and blogs before I get back to work on the 8th.
Hope you and your staff get to feeling better real soon.
Thank you! Thankfully I am healthy 🙂
Good luck dodging all the covid cases around you. We are starting to be more careful, after a summer of feeling more free because so many people were vaccinated. Illnesses are becoming more and more frequent, even among the vaccinated.

A friend of mine has reported the same where she lives. I think mask wearing is a must for right now 🙂
those are some close contacts with COVID – glad you stayed healthy!
me too!
Have a great trip!
thank you Tammy 🙂
Hi Tandy, sorry to hear you’ve had the close brush with Covid, it’s sure an unsettling feeling.. I often make soft cheese like yours and I find it’s a versatile thing to incorporate into a lot of dishes. Often I just eat it on a slice of toast with some honey! Take care in these difficult times x
I am going to try your version as I always have left overs. Stay safe as well 🙂
We stay home most of the time but do need to shop and take our dog to the park but…we take precautions in spite of being vaccinated. I hope you continue to stay healthy and also wish for a speedy recovery for your work mates.
Love love love peanut butter cookies and the chocolate truffles! I’ve not had the nerve to try making spring rolls before and I do so love a good eggroll or spring roll.
I was so glad I made the spring rolls and I will do so again! Stay safe 🙂
We had a big Covid sigh of relief too. My sister tested positive the day of my daughter’s wedding party. I had almost gone over there to bake when our power was out but she said she didn’t feel well so I went to my sister-in-laws. So that meant I hadn’t seen her in weeks. Fortunately her husband tested negative because he’d been over helping paint, etc before the event. Also so happy to be vaccinated–and that the event was outdoors!
that was a close call!
What lovely scones. I just want some right now. I have never made scones and I think the reason is that my mother’s were so perfect. Maybe it’s time to get over that. Im pleased to hear you are safe.
Do you have her recipe? It would be lovely to share it if you do 🙂
