By the end of July, my August 2024 diary was looking quite healthy. I had a midweek coffee date set up with a friend which was very special. She works 6 days a week, and I was so grateful for her taking time out to celebrate my birthday. Another midweek lunch date was arranged when a friend’s husband went away. Then there was lunch with my aunt, and my other mother. As well as dinner with friends. But the most special of all was getting together with blogging friends I met when I first started this madness in 2009!
Baking, baking, and more baking in August 2024
It is only when I looked back on the month that I realised I shared a lot of sweet recipes, and every one of the dishes I shared used the oven! I started off with gateau invisible which is a labour of love, but so worth the effort. Then there was French pastry which was for my chocolate pear tart. But before that could be made, pears needed poaching. International scone week came and went and I made sour cherry scones, raspberry and white chocolate scones, and pear and ginger scones. And to make sure not everything was on the sweet side, I made frandura di Montalto, which is a savoury potato dish.
What was new in my kitchen
I had to visit an Asian store for the seaweed, and while I was there I picked up a packet of coconut cream powder. It was cheap, and I thought a great ingredient to have in the pantry. I made quick use of it in a curry I made one afternoon. Usually I open a tin of coconut cream and use half. This way, I could just open the packet and add the liquid of my choice. I would not go out of my way to buy this again. But next time I am at the Asian store I will get a few more packets.

I bought some roasted seaweed snacks and to my surprise and horror, they were really sweet! I had expected them to be savoury. Oh well… What a wonderful month of cooking you had. Thanks for joining in this month.

Coconut cream powder is very intriguing. As you mentioned, I usually open a can and then have leftovers.

Such lovely bakes! Our heat level in August here in East Texas is not oven baking weather, but I did return (finally) to baking our bread once again, and after 2 years, that was a nice feeling.

I discovered the coconut cream powder trick a long time ago from a Sri Lankan mama of my friend, she said it reduces waste and you can get it as coconut-y as you want, still using the same trick more than a decade later! Loving the look of your sweet bakes
Now I am even more determined to stock up!
