My challenge for this week is to make a pasta dish using 5 ingredients. These 5 ingredients do not include the pasta, olive oil or seasoning but you have to use 5! This recipe for Pasta With Anchovies, Garlic, Capers And Tomatoes only uses 4, but should give you some idea of how simple it is to make a tasty pasta dish with few ingredients. I know people either love or hate anchovies. I used to be in the loathe column but after finding some good quality anchovies I know find myself on the love side. My advice is to use the best you can afford. This really goes for all ingredients. When you cook with anchovies they lose their ‘fishy’ taste and add salt to the dish.
Pasta with Anchovies, Garlic, Capers and Tomatoes
Ingredients
- 15 mls olive oil
- 3 to matoes chopped
- 2 cloves garlic sliced
- 5 anchovy fillets
- 15 mls capers drained
Method
- while you are cooking the pasta heat the olive oil in a large frying pan
- add the tomatoes and the garlic
- when the tomatoes start breaking up add the anchovies and the capers
- add the drained cooked pasta and toss through
- serve and enjoy!
