Recipe For Butter Biscuits

The challenge this week was to bake biscuits or cookies. I have a cookie press but this recipe’s dough was too soft for the press. It is a sticky, sloppy dough but add a bit more flour if you need to.

Butter Biscuits

Ingredients

  • 125 g butter at room temperature
  • 180 g sugar - I used fructose
  • 165 g flour
  • 10 g cocoa powder
  • 15 mls baking powder
  • 1 egg lightly beaten

Method

  • preheat the oven to 150° Celsius
  • cream the butter and the sugar together
  • sieve the dry ingredients into the mix
  • add the egg and mix well
  • roll into balls and place on a greased baking tray
  • press each one with the back of a fork
  • bake for 12 minutes for soft cookies, and 15 minutes to make them more crunchy
  • allow to cool before sampling

Notes

the dough can be frozen! Freeze in a sausage shape and defrost in the freezer. Cut off slices, roll into balls and continue as above

  1. Mmmmm…. I am all about nice soft cookies.

    I’m going to try and make these on Sunday and see what happens. They appear to be on the easier side of baking and seem simply delicious. I just hope I don’t get over zealous and try do do something crazy like frost them and add sprinkles (I’ve been known to do that). They should probably remain in their perfect simplicity.

  2. Can’t believe I missed this challenge! I have the perfect cookie recipe!! We were playing around with recipes the other day, and finally got to the most basic, and then you just tweak it into the direction you want it to be.
