Chicken casserole is a firm favourite in my household – it is easy to make and practically cooks itself. This dish is perfect for when you need to prepare something in advance, or when you need a good dose of comfort food. I think that this is one of the first meals Dave ever cooked for me. It must have been winter and he must have been in the mood for cooking. This is also one of the first recipes I thought of to share here on the blog. It is so simple to do, and in winter provides the ultimate hot meal.

The best thing about this recipe is that you do not need to stick to the ingredient list. The tinned tomatoes are the only ingredient, other than the chicken that you have to use. We often make this with mushrooms. And sometimes we toss in a few baby marrows. Courgettes are fantastic to cook for a long time. I love the combination of chicken and cauliflower so that is another substitution that I make. To me, the peas just add a nice pop of flavour as well as colour.
Chicken Casserole
Ingredients
- 15 mls olive oil
- 2 chicken thighs
- 2 chicken drumsticks
- 1 sweet potato sliced
- 1 yellow pepper sliced
- 5 mls Cajun spice
- 1 tin tomatoes
- 125 mls frozen peas
Method
- heat the olive oil in your casserole dish
- season the chicken with the Cajun spice and brown the chicken pieces
- add to the pot the sweet potatoes, yellow pepper and tinned tomatoes
- cook gently over a low heat for at least 40 minutes
- you may need to add water to ensure it stays moist
- when the chicken is cooked, add the peas and turn up the heat
- adjust the seasoning before serving
