Dairy Free Smoothie

Blueberries are low in carbohydrates and consist mainly of water. They are not particularly nutrient rich either. However, they have low calorific value and glycemic load and are perfect for use in a dairy free smoothie.

At the beginning of August last year the electrician went to the house we rent out. The stove was not working properly and we were quoted for new filters for the extractor. They also quoted to re-secure the oven and hob. The quotation came to over R1600 and I paid 80% of the amount as we get a discount for upfront payment. The payment was done in the middle of August. Two weeks later we left for overseas and the work had not been done. The electrician decided we actually needed a new hob and oven. The quotation just for that, without labour and parts was R4800. When we got back from overseas I went to purchase the stove myself. It cost me under R4000 for a new hob, oven and extractor fan. I used our builder to do the installation. And the total bill came to less than R4800.

At the same time I requested that the electrician refund our deposit. To date this has not happened. Finally after months of no response I have been sent an email. Basically, they have used the deposit I paid them to cover costs of other jobs. They don’t have the R1353.75 ($100) in the bank to repay me. And if they do get money in, the bank is taking it to pay off their debts. This leaves me very worried about ever getting my money back. One thing I am not worried about is enjoying this smoothie. I used my home-made almond milk and I have already bought more blueberries to make it again.

Dairy Free Smoothie

Use regular milk if you are not lactose intolerant

Makes enough for: 1 smoothie

Ingredients

  • 250 mls almond milk
  • 30 mls superfruit powder
  • 75 g frozen blueberries
  • 15 g honey
  • 1.25 mls ground cinnamon

Method

  • Place all of the ingredients into a blender
  • Blend until smooth
  • Strain if you don't ike the texture of the blueberry skins

    Could you up the quantity of milk or include crushed ice to thin it out a bit Tandy? It looks thick enough to eat with a spoon. I’m sorry to hear about your issues with the electrician. I hope you get your money back. xx
