We eat a lot of tomatoes, not just for their taste, but for health benefits as well. These oven dried tomatoes are simple to make and all you need is salt and pepper to season them.
Oven Dried Tomatoes
As much as I do not like being sick, I also do not like tablets. I usually self medicate. Sometimes this is successful and other times not. I take all sorts of naturopathic concoctions and hope for the best. I was not well a month ago, and managed to chase away the lurgies with my echinacea, vitamin C and the likes. Two trips back to gym and I got sick again. As we had a trip to George planned and then I travelled away from home, I could not stay sick. I know when I am about to get a sore throat, I crave tomatoes. It is the natural vitamin C that my body craves. Inspired by Chica Andaluza, I made these oven dried tomatoes to help keep the sore throat at bay. So far, that has worked. Now I just need to figure out how to turn the tap of the post nasal drip off!
You can see that my photography skills were sorely lacking in this blog post. It never occured to me when I started blogging I needed to pay more attention to this aspect of my recipes.
Oven Dried Tomatoes
Ingredients
- 5 tomatoes
- Salt and freshly ground black pepper to season
Method
- preheat the oven to 120° Celsius
- grease a baking tray
- slice the tomatoes about 4mm thick
- arrange them on the baking tray and season
- bake for 90 minutes, turning each 30 minutes
- do not season again otherwise they will be too salty
- these will stay soft if kept in a sealed container

So sorry to hear about your sore throat – you´ve been a bit unweel recently haven´t you? Not good. And thanks for the shout out – it´s good to hear abiout someone oven drying successfully. Hope you are soon on the mend. How about a hot lemon, honey and whisky?!

I am with chica on the honey, Anyone who gets a cold here has to drink gallons of honey water drinks. just honey and water, hot or cold, all day.. it is wonderful. (and a little whisky would not go amiss i am sure!) Poor you. I had not seen the oven dried tomatoes and i still have some in the garden.. I will try it. c

What a great idea…sometimes I get greedy and buy too many tomatoes…so this is a great way to prepared them and have it handy.

Sorry to hear you are not feeling well. It sounds like you are doing everything to get better. Made sure to get enough rest…and the whisky doesn’t sound bad. Add lemon and honey to it and you will have a nice bit of medicine. Take care.
