Last year I rushed my entry into the Woolworths Soup Competition as we were heading for our annual overseas trip. I entered three soup recipes, based on the concept of the soups currently sold by Woolworths at that time. One of my entries was my broccoli and cheese soup recipe. I thought this would be perfect for reheating. My concept of what Woolworths was looking for was far off base. This year I gave a lot of thought to what I wanted to do for my entry. We are talking about R50 000 winner takes all, and I really want to be the winner. This carrot and beef short rib soup came about from a few factors. I had some carrots in my fridge that needed cooking and decided they would be a perfect base for my soup. I then turned to my flavour thesaurus and beef came up as a good match. I have never before cooked with beef short ribs so I thought they would be a good addition to the soup. I think this soup is awesome, and I hope the judges think so too!

Carrot and Beef Short Rib Soup
Ingredients
- 15 mls olive oil
- 500 g beef short rib
- 150 g chopped onions
- 150 g chopped celery
- 500 g chopped carrots
- 500 mls vegetable stock
- 400 mls coconut cream
- 2 whole star anise
- salt and freshly ground black pepper to season
- 10 mls flat leaf parsley chopped, for garnishing
Method
- in a large pot or casserole dish, heat the olive oil
- brown the beef short ribs
- remove from the oil and add the onion and the celery
- sauté until soft
- add the carrots, ribs, stock, coconut cream and star anise
- bring the soup to the boil, reduce the heat, cover and simmer for 2 hours
- allow to cool
- remove the beef and the star anise
- purée the soup until you have a rough consistency
- return to the heat
- cut the beef off the bone
- add to the soup
- adjust the seasoning
to serve:
- when the soup has heated through dish up into bowls and garish with the parsley

Have you tried any of their new winter range? Quite a few have coconut milk in them so I think you’re in with a chance!
