Yesterday, I posted a recipe for flour tortillas that I made to serve with a cold soup. I love cold soups and this is one of my favourites. With cucumber being so refreshing, it is perfect for hot summer days. Our summer is not over. This morning it was 22°C/71.6°F at 7am and I always have these ingredients in my fridge, so I know what I will be making for lunch today. It is one of those recipes that is super easy to make and perfect for when you want a quick meal. As I said, this is not Dave’s favourite so I tend to make the soup for myself when I am home alone. This means going home for lunch during the working week, which I really don’t mind doing when it is so hot. Work is impossible in the heat as I cannot concentrate. We do not have air conditioning in our office and the sun streams in through the windows. My desk faces the sun so you can imagine just how hot it is.

Cold Cucumber and Avocado Soup

Makes enough for: 1 person

Ingredients

  • 150 g cucumber
  • 50 g avocado
  • 100 mls vegetable stock
  • 5 g coriander
  • Salt and freshly ground black pepper to season
  • 5 mls cream

Method

  • place the cucumber, avocado, stock and coriander into a blender
  • blend until smooth
  • add salt and pepper to season
  • swirl in the cream

  2. Lovely recipe and will make a lovely change for us from gazpacho! Funnily enough we have avocadoes pretty much year round as they are grown down on the coast but the tasty cucumbers will be a month or so yet…

    1. I wish we had avo’s all year that were cheap. Out of season they are ridiculously expensive but I buy pulp and I even have some frozen for ‘in case’ 🙂
