October 2021 Showcasing In My Kitchen

October 2021 was full of highs and lows. The highlight of the month was a visit to The Netherlands to see Mark. The low was just the rest of the month while I felt like I was swimming upstream. Despite all of that, I managed a fair amount of recipes for the month.

First up was an all butter pastry for my beetroot tart. I still have not shared the recipe as I am not 100% happy with it. I was however so happy with the cauliflower gratin that I have made it more than once. The Japanese milk rolls will appear again on our table, when I make lobster rolls. As will the colcannon as it is easy to make and tasty. To top this fancy mash was a huge batch of black pudding meatballs. I made several batches of the chipotle cashews – make double, they are moreish. The pickled red cabbage is waiting for more days of hot dogs and lazy lunches.

On the sweet side

Sweet treats that featured on the blog last month included chocolate ginger cookies, lavender and lime drizzle cake and chocolate and tahini banana bread. I also dried lemons for an upcoming recipe, and raided the freezer for my pomegranate ice cream when I realized I had lost all my photographs taken this year.

One new thing IMK

My mom and I both use cooking oil filters. I filter oil as soon as I have used it for deep frying and it is then used straight away on the dogs food. For ages, neither of us could find them. I had a few left over, so it was not really an issue for me as I do not deep fry that often. But when my mom found I told her to send me a pack. These 6 should last me the next 10 years!

  1. Is an oil filter different from a coffee filter? I wonder if you could convert a filter coffee gadget to reuse of cooking oil. I figure that if I want something deep fried I’ll go to a restaurant — or even to MacDonalds!

    You sure did do a lot of cooking and baking and everything looks so good. The pickled red cabbage and the lime and lavender drizzle cake look like somethings we would love.

  3. swimming upstream indeed. these last few months have been swimming against a tidal wave. thanks for joining in. I”ve managed to add your post! Had to get Mr P. to help as my brain is like jelly lately. Must have been nice to get away. i have been housebound for weeks…

  4. The cooking oil filters are interesting, I’ve never seen them before but what a good idea. And also adding a bit of oil to the dog food, I bet that will encourage them to eat. I will have to try it. I save the bits of chicken or other meats off the bones when I make stock and they love those added to their food.
