Just add cheese and it will be better! Here I have taken ordinary cauliflower cheese and added my trusty bacon condiment, to make the tastiest Cauliflower Gratin.

I spoke on Friday about love, and today, that theme continues. Over twenty years ago I arrived in Gordons Bay to start a new life with the love of my life. Dave and I had been together as a couple for 6 years, and friends for 18 months prior to that. And the journey to me moving here was not the easiest. But in those first 6 years I achieved an amazing high in my motorsport career. I became a Fédération Internationale de Motocyclisme Clerk of The Course. With this under my belt, I was involved in several International Motorbike races, including World Superbikes and MotoGP. I got to meet famous riders from all over the world which was quite something. And all the time I felt that Dave was the wind beneath my wings. Particularly, he was content to let me shine!

Today I want to tell him that he is my hero and that I would be nothing without him. Everything we have built together is because we support one another. All our successes are because he has stood beside me, as much as I have stood beside him. We have a beautiful home, a loving family and a relationship that has withstood so much. We have travelled all over together, been on all sorts of adventures, and seen so much. And now 20 years after a surprise birthday gathering I organized for him, I get to wish Dave all of G-d’s abundances as he heads into his next decade. And I get to thank G-d for him, the wind beneath my wings. I am looking forward to where this road will take us and what new and exciting things we will do together. Is there a song that perfectly describes the love of your life?

Cauliflower Gratin
This fancy cauliflower cheese makes for a scrumptious side dish
Ingredients
- 90 g bacon pieces
- 600 g whole cauliflower, trimmed and thickly sliced
- 10 g salted butter, plus extra for greasing
- 100 g mature cheddar cheese, grated
- 250 mls cream
- salt and freshly ground black pepper to season
Method
- Preheat the oven to 150° Celsius
- Place the bacon into a dry, non-stick frying pan and heat over a medium temperature
- Render the fat, then set aside to cool slightly
- Layer half of the cauliflower into a greased, oven proof baking dish and season generously
- Top with the bacon and rendered fat then sprinkle over half of the cheese
- Top with the rest of the cauliflower and season generously
- Pour the cream over the cauliflower then dot the butter over the top
- Place into the oven and bake for 50 minutes
- Remove from the oven, sprinkle the rest of the cheese on top then place back into the oven
- Cook for a further 10 minutes, then remove from the oven
- Cover with tin foil and leave to stand for 10 minutes before serving

Interesting idea to add bacon to a classic vegetarian dish. Definitely for meat lovers! I tend to use a white sauce, or Béchamel, for this dish.
